The irony of mastery

In the Netflix TV show Culinary Class Wars, chef Anh Sung-jae who runs the three-Michelin-star restaurant Mosu, said he’ll never give a dish a rating of 100 out of 100 — insisting that there is always room to improve.

The irony of mastery is the only way to be better is to never assume you’re the best.

Chef Anh is arguably great in part because he never assumes perfection of any of his work.

Stagnancy and mediocrity happen whenever we convince ourselves otherwise.
